So here’s a challenge: Have a look in your fridge and cupboards and cook up a meal in under 60 minutes using leftovers or other items you’d normally toss in the trash! Add vegetable scraps to the pot to simmer for stock. Mash bananas into a yummy banana cake. Add leftover veggies to elevate your fried rice.
