Here’s a challenge: Take a look in your fridge and pantry, and whip up a meal in under 60 minutes using leftovers or ingredients you’d usually toss! Simmer vegetable scraps into a rich, flavorful stock. Mash overripe bananas into a delicious banana cake. Toss leftover veggies into fried rice for an easy, hearty dish.
